Parmesan Orzo with Chicken and Asparagus

Ingredients
  • 1 lb chicken breast
  • 1 cup asparagus
  • 2 cups orzo
  • 2 cups half and half
  • 3 cups chicken broth
  • 1 1/2 cups Parmesan cheese
  • 1 large onion
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 2 tbsp parsley
  • 1 tbsp paprika
  • 1/2 tsp pepper
  • 1/2 tsp salt
  1. Season chicken breasts with salt, pepper and paprika.
  2. Heat olive oil in a large skillet, then sear chicken for about 5 minutes per side Transfer to a warm plate after and set aside.
  3. Sauté asparagus in same skillet for about 3 minutes. Set aside.
  4. Sauté garlic and onion in same skillet. Set aside.
  5. Sauté orzo briefly, then add half and half, chicken broth, and stir.
  6. Bring to a boil, then lower to simmer. Cover for 10 minutes.
  7. Remove lid and slowly add Parmesan cheese. Add salt and pepper to taste.
  8. Add asparagus and continue stirring.
  9. Serve warm with slices of chicken breast and garnish with parsley and Parmesan.
