Parmesan Orzo with Chicken and Asparagus
Ingredients
- 1 lb chicken breast
- 1 cup asparagus
- 2 cups orzo
- 2 cups half and half
- 3 cups chicken broth
- 1 1/2 cups Parmesan cheese
- 1 large onion
- 4 cloves garlic
- 2 tbsp olive oil
- 2 tbsp parsley
- 1 tbsp paprika
- 1/2 tsp pepper
- 1/2 tsp salt
- Season chicken breasts with salt, pepper and paprika.
- Heat olive oil in a large skillet, then sear chicken for about 5 minutes per side Transfer to a warm plate after and set aside.
- Sauté asparagus in same skillet for about 3 minutes. Set aside.
- Sauté garlic and onion in same skillet. Set aside.
- Sauté orzo briefly, then add half and half, chicken broth, and stir.
- Bring to a boil, then lower to simmer. Cover for 10 minutes.
- Remove lid and slowly add Parmesan cheese. Add salt and pepper to taste.
- Add asparagus and continue stirring.
- Serve warm with slices of chicken breast and garnish with parsley and Parmesan.
