Spinach & Quinoa Patties

Ingredients
  • 3 cups cooked quinoa
  • 4 eggs
  • 1/2 tsp salt
  • 2 tbsp minced parsley
  • 2 cloves minced garlic
  • 1 large carrot, peeled & shredded
  • 4 green onions, diced
  • 1 cup spinach
  • 1/2 cup parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 2 tbs olive oil
  1. Combine all ingredients in a large bowl (except for olive oil) until well mixed. Add more breadcrumbs if necessary to achieve a mixture that will hold it’s shape when formed into patties.
  2. Let the mixture rest for 5-10 minutes to allow melding.
  3. Heat oil in a large skillet over medium-high heat.
  4. Form the mixture into small patties, and cook for 2 minutes on each side, or until golden brown.
