Spinach & Quinoa Patties
Ingredients
- 3 cups cooked quinoa
- 4 eggs
- 1/2 tsp salt
- 2 tbsp minced parsley
- 2 cloves minced garlic
- 1 large carrot, peeled & shredded
- 4 green onions, diced
- 1 cup spinach
- 1/2 cup parmesan cheese
- 1/4 cup panko breadcrumbs
- 2 tbs olive oil
- Combine all ingredients in a large bowl (except for olive oil) until well mixed. Add more breadcrumbs if necessary to achieve a mixture that will hold it’s shape when formed into patties.
- Let the mixture rest for 5-10 minutes to allow melding.
- Heat oil in a large skillet over medium-high heat.
- Form the mixture into small patties, and cook for 2 minutes on each side, or until golden brown.
