Arroz con Pollo
Ingredients
- 1 cup uncooked rice
- 1 chicken, pieces fried separately
- 1 can diced tomatoes
- 12 ounces water
- 6 oz. tomato paste
- 12 ounces mushrooms
- 1 white onion
- 1 green bell pepper
- 1 clove garlic, chopped
- 1/2 tsp lemon pepper
- 1/2 tsp saffron
- 1 bay leaf
- 1 cup cooked peas
- Preheat oven to 350°F.
- Add rice and chicken to a buttered casserole dish.
- Combine tomatoes, water, tomato paste, and mushrooms in a large bowl.
- Sauté onion, green pepper, pimento, garlic, lemon pepper, saffron, and bay leaf in a medium sized pan. Add salt and pepper to taste.
- Add the sautéd ingredients to the tomato mixture. Combine well then pour over the casserole dish.
- Cover and bake for 1 hour.
- Top with peas after baking and serve warm.
