Arroz con Pollo

Ingredients
  • 1 cup uncooked rice
  • 1 chicken, pieces fried separately
  • 1 can diced tomatoes
  • 12 ounces water
  • 6 oz. tomato paste
  • 12 ounces mushrooms
  • 1 white onion
  • 1 green bell pepper
  • 1 clove garlic, chopped
  • 1/2 tsp lemon pepper
  • 1/2 tsp saffron
  • 1 bay leaf
  • 1 cup cooked peas
  1. Preheat oven to 350°F.
  2. Add rice and chicken to a buttered casserole dish.
  3. Combine tomatoes, water, tomato paste, and mushrooms in a large bowl.
  4. Sauté onion, green pepper, pimento, garlic, lemon pepper, saffron, and bay leaf in a medium sized pan. Add salt and pepper to taste.
  5. Add the sautéd ingredients to the tomato mixture. Combine well then pour over the casserole dish.
  6. Cover and bake for 1 hour.
  7. Top with peas after baking and serve warm.
