Avocado Salad Dressing
Ingredients
- 1 large, ripe avocado
- 1 lemon
- 3 tbsp olive oil
- 1 tsp sugar
- 2 tsp white wine vinegar
- 1 green onion
- Chop the green onion, peel the avocado, and place both into a food processor.
- Add some lemon zest, nearly all juice from the lemon, olive oil, some sugar, white wine vinegar, and 2 tbsp water.
- Blend on medium speed briefly.
- Add water or sugar as needed for consistency and taste.
Serve immediately or store in an air-tight container for up to 5 days.
