Avocado Salad Dressing

  • 1 large, ripe avocado
  • 1 lemon
  • 3 tbsp olive oil
  • 1 tsp sugar
  • 2 tsp white wine vinegar
  • 1 green onion
  1. Chop the green onion, peel the avocado, and place both into a food processor.
  2. Add some lemon zest, nearly all juice from the lemon, olive oil, some sugar, white wine vinegar, and 2 tbsp water.
  3. Blend on medium speed briefly.
  4. Add water or sugar as needed for consistency and taste.

Serve immediately or store in an air-tight container for up to 5 days.
