Brussels Sprout and Walnut Salad
Ingredients
- 1 lb Brussels sprouts
- 1/4 cup green onion, thinly sliced
- 1/4 cup walnuts
- 3 tbsp parsley, chopped
- 1 tbsp ginger, grated
- 1/4 cup Asiago, grated
- 3 tbsp Apple cider vinegar
- Salt and pepper
- Olive oil
- Cut off the base of each sprout (where the leaves attach), peel off individual leaves, and place in a large bowl. Discard the smallest leaves in the middle.
- Add all other ingredients (except salt and pepper) and mix gently.
- Add salt and pepper to taste, then garnish with Asiago.
Serves best fresh. Enjoy!
