Brussels Sprout and Walnut Salad

  • 1 lb Brussels sprouts
  • 1/4 cup green onion, thinly sliced
  • 1/4 cup walnuts
  • 3 tbsp parsley, chopped
  • 1 tbsp ginger, grated
  • 1/4 cup Asiago, grated
  • 3 tbsp Apple cider vinegar
  • Salt and pepper
  • Olive oil
  1. Cut off the base of each sprout (where the leaves attach), peel off individual leaves, and place in a large bowl. Discard the smallest leaves in the middle.
  2. Add all other ingredients (except salt and pepper) and mix gently.
  3. Add salt and pepper to taste, then garnish with Asiago.

Serves best fresh. Enjoy!
