Cast Iron Hasselback-Style Potatoes

  • 4-6 large russet potatoes
  • 1 cup shredded cheese
  • 1/4 cup chopped green onion
  • 4 cloves garlic, diced
  • 6 strips bacon, diced
  • 1 red onion, diced
  • 8 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  1. Preheat oven to 400°F
  2. Wash, then cut potatoes along the bottom lengthwise to create a flat surface. Then cut into slices nearly all the way through, leaving the last 1/4″ intact. Straddle potatoes between a pair of chopsticks or similar tool to avoid cutting through fully.
  3. Arrange potatoes into cast iron skillet and drizzle with olive oil.
  4. Sprinkle garlic, bacon, and slices of butter onto potatoes. Add a dash of salt and pepper.
  5. Bake for ≈40 minutes and remove from oven once potatoes are tender.
  6. Garnish with cheese and green onions then serve warm.
