Cast Iron Hasselback-Style Potatoes
Ingredients
- 4-6 large russet potatoes
- 1 cup shredded cheese
- 1/4 cup chopped green onion
- 4 cloves garlic, diced
- 6 strips bacon, diced
- 1 red onion, diced
- 8 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
- Preheat oven to 400°F
- Wash, then cut potatoes along the bottom lengthwise to create a flat surface. Then cut into slices nearly all the way through, leaving the last 1/4″ intact. Straddle potatoes between a pair of chopsticks or similar tool to avoid cutting through fully.
- Arrange potatoes into cast iron skillet and drizzle with olive oil.
- Sprinkle garlic, bacon, and slices of butter onto potatoes. Add a dash of salt and pepper.
- Bake for ≈40 minutes and remove from oven once potatoes are tender.
- Garnish with cheese and green onions then serve warm.
