Coffee Cake

Ingredients
FOR THE CAKE
  • 1 1/2 stick soft butter
  • 2 cups sugar
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 1/4 cup whole milk
  • 3 egg whites, beaten
FOR THE TOPPING
  • 12 tbsp butter
  • 2/3 cups all-purpose flour
  • 1 1/2 cups brown sugar
  • 2 tbsp cinnamon
  • 1 1/2 cups chopped pecans
  1. Preheat oven to 350°. Grease or butter a 9″ x 13″ baking pan (or larger).
  2. Sift together: flour, baking powder, and salt.
  3. Beat egg whites until firm and set aside.
  4. Combine the butter and sugar (not the brown sugar for the topping) until creamy.
  5. Slowly add the flour mixture and milk until well combined. Be sure not to over-mix. Fold in the beaten egg whites with a rubber spatula. Spread into the greased/buttered baking pan.
  6. In a separate bowl, combine the ingredients for the topping with a fork or pastry crumbler. Sprinkle on top of the cake mixture
  7. Bake for 40 to 45 minutes or until a toothpick comes out clean.
  8. Serve warm
