Coffee Cake
Ingredients
FOR THE CAKE
- 1 1/2 stick soft butter
- 2 cups sugar
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1 1/4 cup whole milk
- 3 egg whites, beaten
FOR THE TOPPING
- 12 tbsp butter
- 2/3 cups all-purpose flour
- 1 1/2 cups brown sugar
- 2 tbsp cinnamon
- 1 1/2 cups chopped pecans
- Preheat oven to 350°. Grease or butter a 9″ x 13″ baking pan (or larger).
- Sift together: flour, baking powder, and salt.
- Beat egg whites until firm and set aside.
- Combine the butter and sugar (not the brown sugar for the topping) until creamy.
- Slowly add the flour mixture and milk until well combined. Be sure not to over-mix. Fold in the beaten egg whites with a rubber spatula. Spread into the greased/buttered baking pan.
- In a separate bowl, combine the ingredients for the topping with a fork or pastry crumbler. Sprinkle on top of the cake mixture
- Bake for 40 to 45 minutes or until a toothpick comes out clean.
- Serve warm
