Cream of Broccoli Soup

Ingredients
  • 1/2 russet potato, diced
  • 2 cups chopped broccoli
  • 2 cups vegetable stock
  • 1/2 cup chopped onions
  • 2 tbsp vegetable oil
  • 1 tsp chopped garlic
  • 1/2 tsp curry powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp turmeric
  1. Briefly sauté garlic, and onions with vegetable oil in a large skillet.
  2. Add potatoes, curry powder, and turmeric.
  3. Simmer on low heat for 5 minutes.
  4. Stir well while adding vegetable stock then bring to a boil.
  5. Add broccoli then allow to simmer over medium heat for 15 minutes.
  6. Allow mixture to cool slightly before pureeing in a blender to a smooth consistency.
  7. Add salt and pepper to taste and serve warm.
