Cream of Broccoli Soup
Ingredients
- 1/2 russet potato, diced
- 2 cups chopped broccoli
- 2 cups vegetable stock
- 1/2 cup chopped onions
- 2 tbsp vegetable oil
- 1 tsp chopped garlic
- 1/2 tsp curry powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp turmeric
- Briefly sauté garlic, and onions with vegetable oil in a large skillet.
- Add potatoes, curry powder, and turmeric.
- Simmer on low heat for 5 minutes.
- Stir well while adding vegetable stock then bring to a boil.
- Add broccoli then allow to simmer over medium heat for 15 minutes.
- Allow mixture to cool slightly before pureeing in a blender to a smooth consistency.
- Add salt and pepper to taste and serve warm.
