Moroccan Spiced Carrots
Ingredients
- 3 cups carrots, sliced
- 1 cup water
- 4 diced garlic cloves
- 3 tbsp lemon juice
- 2 tbsp paprika
- 1 tbsp cumin
- 1 tbsp coriander
- 1 tbsp olive oil
- 1/4 cup parsley
- Pinch of salt
- Briefly sauté garlic, paprika, cumin and coriander with olive oil in a large skillet.
- Add carrots, water, salt, and lemon juice.
- Simmer on low heat, covered until nearly tender – max 8 minutes.
- Uncover and allow to cool slightly. Sauce will thicken.
- Add parsley and serve warm.
