Moroccan Spiced Carrots

Ingredients
  • 3 cups carrots, sliced
  • 1 cup water
  • 4 diced garlic cloves
  • 3 tbsp lemon juice
  • 2 tbsp paprika
  • 1 tbsp cumin
  • 1 tbsp coriander
  • 1 tbsp olive oil
  • 1/4 cup parsley
  • Pinch of salt
  1. Briefly sauté garlic, paprika, cumin and coriander with olive oil in a large skillet.
  2. Add carrots, water, salt, and lemon juice.
  3. Simmer on low heat, covered until nearly tender – max 8 minutes.
  4. Uncover and allow to cool slightly. Sauce will thicken.
  5. Add parsley and serve warm.
