Creamy Mac n Cheese

  • 16 oz. pasta shells
  • 8 oz. white mushrooms
  • 1/2 white onion
  • 1 1/4 cup heavy cream
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1 cup shredded mozzarella
  • 1 cup shredded cheddar cheese
  • salt and pepper to taste
  1. Cook the pasta in a large pot to al dente, drain and set asise.
  2. In a small skillet, combine mushrooms and onion Cook until moisture is released then set aside.
  3. In a separate pan, melt butter, then whisk in flour and a pinch of salt and pepper.
  4. Add milk and heavy cream. Whisk until smooth.
  5. Continue heating over medium until mixture thickens, stirring regularly as needed.
  6. Lower heat and add cheeses.
  7. Add mushrooms and onion to cheese mixture and mix thoroughly.
  8. Add pasta to mixture and allow to set for 5 minutes before serving warm.
