Creamy Mac n Cheese
Ingredients
- 16 oz. pasta shells
- 8 oz. white mushrooms
- 1/2 white onion
- 1 1/4 cup heavy cream
- 1 cup milk
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 1 cup shredded mozzarella
- 1 cup shredded cheddar cheese
- salt and pepper to taste
- Cook the pasta in a large pot to al dente, drain and set asise.
- In a small skillet, combine mushrooms and onion Cook until moisture is released then set aside.
- In a separate pan, melt butter, then whisk in flour and a pinch of salt and pepper.
- Add milk and heavy cream. Whisk until smooth.
- Continue heating over medium until mixture thickens, stirring regularly as needed.
- Lower heat and add cheeses.
- Add mushrooms and onion to cheese mixture and mix thoroughly.
- Add pasta to mixture and allow to set for 5 minutes before serving warm.
