Ladies Cabbage
Ingredients
- 2 lb cabbage, shredded
- 1/4 cup heavy cream
- 1/4 cup butter
- 1/2 cup apple cider vinegar
- 2 eggs
- 1 tbsp lemon juice
- Salt and pepper to taste
- 1/4 cup seasoned breadcrumbs
- Preheat oven to 350°
- Cook cabbage in a large pot with 1/2 cup apple cider vinegar for 5-7 minutes. Drain well and allow to cool.
- Chop cabbage even finer, if possible, then combine with heavy cream, butter, two eggs (lightly beaten), about half the lemon juice, and season with salt and pepper.
- Pour into a buttered 1.5 quart baking dish, top with breadcrumbs, and bake for 25 minutes.
- Drizzle with remaining lemon juice and serve warm or chilled.
