Ladies Cabbage

  • 2 lb cabbage, shredded
  • 1/4 cup heavy cream
  • 1/4 cup butter
  • 1/2 cup apple cider vinegar
  • 2 eggs
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1/4 cup seasoned breadcrumbs
  1. Preheat oven to 350°
  2. Cook cabbage in a large pot with 1/2 cup apple cider vinegar for 5-7 minutes. Drain well and allow to cool.
  3. Chop cabbage even finer, if possible, then combine with heavy cream, butter, two eggs (lightly beaten), about half the lemon juice, and season with salt and pepper.
  4. Pour into a buttered 1.5 quart baking dish, top with breadcrumbs, and bake for 25 minutes.
  5. Drizzle with remaining lemon juice and serve warm or chilled.
