New England Crab Cakes
Ingredients
- 1 lb crabmeat
- 1/4 cup parsley, chopped
- 1 cup scallions, chopped
- 2 eggs
- 1 1/2 cups panko breadcrumbs
- 1/4 cup milk
- 3/4 tsp Worcestershire sauce
- 2 tbsp mustard
- 2 tbsp olive oil
- Salt and pepper to taste
- Place crabmeat, parsley, scallions, and half the breadcrumbs in a large bowl.
- In a separate bowl, combine eggs, milk, Worcestershire, mustard, and salt and pepper until well mixed.
- Pour this mixture over the crab mixture and stir gently. Leave the crabmeat as whole as possible
- Shape into small patties then coat with breadcrumbs.
- Heat oil in a large skillet over medium-high heat.
- Cook each patty for 3-4 minutes or until golden brown.
