New England Crab Cakes

Ingredients
  • 1 lb crabmeat
  • 1/4 cup parsley, chopped
  • 1 cup scallions, chopped
  • 2 eggs
  • 1 1/2 cups panko breadcrumbs
  • 1/4 cup milk
  • 3/4 tsp Worcestershire sauce
  • 2 tbsp mustard
  • 2 tbsp olive oil
  • Salt and pepper to taste
  1. Place crabmeat, parsley, scallions, and half the breadcrumbs in a large bowl.
  2. In a separate bowl, combine eggs, milk, Worcestershire, mustard, and salt and pepper until well mixed.
  3. Pour this mixture over the crab mixture and stir gently. Leave the crabmeat as whole as possible
  4. Shape into small patties then coat with breadcrumbs.
  5. Heat oil in a large skillet over medium-high heat.
  6. Cook each patty for 3-4 minutes or until golden brown.
