Hearty Potato Soup

  • 1 package bacon
  • 1 cups diced, precooked ham
  • 1 cup green onions
  • 3/4 cup flour
  • 1 1/2 cups diced onion
  • 4 cups milk
  • 8 oz. sour cream
  • 3/4 cups butter
  • 6 cups chicken broth
  • 2 lb potatoes, peeled and cubed
  • 2 1/2 cups cheddar cheese
  • 1 tsp ground pepper
  • 1 tsp salt
  1. Cook bacon in a skillet until crisp. Dry with paper towels then crumble into smaller bits.
  2. Cook onions in minimal amount of bacon drippings over medium heat until tender.
  3. In a large stock pot, mix onion, broth, and potatoes. Bring to a boil then reduce to simmer and continue cooking 10 minutes until potatoes are very tender.
  4. In the original skillet on low heat, melt butter then slowly stir in flour until smooth. Continue to stir an additional minute or two then slowly incorporate two cups of milk.
  5. Add this mixture to the stock pot, then add remaining two cups of milk along with salt and pepper. Constantly stir while cooking over medium heat until mixture is thick and bubbly.
  6. Add the ham, bacon, sour cream, and half the green onions.
    Continue to cook until everything is well heated and garnish individual servings with some of the remaining green onion before serving.
