• 1 1/2 cups warm water
  • 1/2 tsp active dry yeast
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp olive oil
  1. Mix the water (105°F – 110°F) and yeast in a large bowl then allow to stand for about 5 minutes to proof.
  2. While stirring, gradually pour in 2 cups of flour.
  3. Mix for about 1 minute until it forms a sponge then let stand (covered) for at least an hour.
  4. Put the sponge in the bowl of a stand mixer. Using a dough hook, add the salt and oil. Once mixed add the remaining flour (1/2 cup at a time). Remove from the bowl and knead.
  5. Place in a clean, oiled bowl and let rise, slowly for about 2 1/2 hours. Afterward, divide the dough into 4 balls and let rise again for 1/2 hour then roll out as desired.
  6. Cook over an iron skillet until golden brown on each side.
