Florentines
Ingredients
- 1 cup slivered almonds
- 1/2 cup sugar
- 1/2 cup bittersweet chocolate
- 4 tbsp butter
- 2 tsp flour
- 2 tbsp heavy cream
- 2 tbsp corn syrup
- 1/4 tsp vanilla
- 1/4 tsp salt
- Grind almonds and sugar in a food processor until finely ground.
- Combine mixture with butter, corn syrup, vanilla, heavy cream, and salt into a small saucepan. Stir constantly over medium heat until well combined. Maximum of 5 minutes.
- Remove from heat and gradually add flour.
- Let mixture rest in refrigerator for ≈ 1 hour.
- Heat oven to 350ºF.
- Cover baking sheet with parchment paper then evenly place tablespoon sized amounts of dough – 2 inches apart. Flatten dough to 1/4 inch thickness.
- Bake until golden brown. ≈ 8 minutes and allow to cool on parchment slightly before transferring to wire rack
- Finish by coating the underside of each with melted bittersweet chocolate and/or drizzing the top with chocolate.
