Florentines

Ingredients
  • 1 cup slivered almonds
  • 1/2 cup sugar
  • 1/2 cup bittersweet chocolate
  • 4 tbsp butter
  • 2 tsp flour
  • 2 tbsp heavy cream
  • 2 tbsp corn syrup
  • 1/4 tsp vanilla
  • 1/4 tsp salt
  1. Grind almonds and sugar in a food processor until finely ground.
  2. Combine mixture with butter, corn syrup, vanilla, heavy cream, and salt into a small saucepan. Stir constantly over medium heat until well combined. Maximum of 5 minutes.
  3. Remove from heat and gradually add flour.
  4. Let mixture rest in refrigerator for ≈ 1 hour.
  5. Heat oven to 350ºF.
  6. Cover baking sheet with parchment paper then evenly place tablespoon sized amounts of dough – 2 inches apart. Flatten dough to 1/4 inch thickness.
  7. Bake until golden brown. ≈ 8 minutes and allow to cool on parchment slightly before transferring to wire rack
  8. Finish by coating the underside of each with melted bittersweet chocolate and/or drizzing the top with chocolate.
