Ginger-Spiced Carrots

Ingredients
  • 1 tbsp olive oil
  • 1 1/2 cups finely diced onion
  • 2 tbsp minced ginger
  • 1 tsp ground cumin
  • 4 tbsp sugar
  • 4 cups peeled, sliced carrots
  • 2 cups Vegetable Stock
  • Pinch of salt
  • 2 tbsp chopped dill
  1. In a large sauté pan, cook onions in olive oil over medium heat until they begin to caramelize. This should be between 5 and 10 minutes
  2. Add the remaining ingredients (except for the salt and dill). Simmer until carrots are tender and most of the liquid had evaporated
  3. Remove from heat and let cool for 5 minutes.
  4. Add the salt and dill then mix well.
