Ginger-Spiced Carrots
Ingredients
- 1 tbsp olive oil
- 1 1/2 cups finely diced onion
- 2 tbsp minced ginger
- 1 tsp ground cumin
- 4 tbsp sugar
- 4 cups peeled, sliced carrots
- 2 cups Vegetable Stock
- Pinch of salt
- 2 tbsp chopped dill
- In a large sauté pan, cook onions in olive oil over medium heat until they begin to caramelize. This should be between 5 and 10 minutes
- Add the remaining ingredients (except for the salt and dill). Simmer until carrots are tender and most of the liquid had evaporated
- Remove from heat and let cool for 5 minutes.
- Add the salt and dill then mix well.
