Party Potato Bites
Ingredients
- 2 lb tiny potatoes
- 1 red onion, cut into wedges
- 2 minced garlic cloves
- 1/2 cup chicken broth
- 1/4 cup chopped green onions
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- Coat slow-cooker with cooking spray.
- Halve or quarter any of the larger potatoes. You want small bite sized pieces.
- In a small bowl, combine chicken broth, garlic, and paprika.
- Place potatoes and onion wedges in the cooker then evenly drizzle with broth mixture.
- Let cook, covered, for 6 to 7 hours (3 to 3.5 hours if set to high heat).
- Take mixture and toss with green onions, salt, and pepper.
- Serve warm or at room temp with aioli.
