Party Potato Bites

Ingredients
  • 2 lb tiny potatoes
  • 1 red onion, cut into wedges
  • 2 minced garlic cloves
  • 1/2 cup chicken broth
  • 1/4 cup chopped green onions
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  1. Coat slow-cooker with cooking spray.
  2. Halve or quarter any of the larger potatoes. You want small bite sized pieces.
  3. In a small bowl, combine chicken broth, garlic, and paprika.
  4. Place potatoes and onion wedges in the cooker then evenly drizzle with broth mixture.
  5. Let cook, covered, for 6 to 7 hours (3 to 3.5 hours if set to high heat).
  6. Take mixture and toss with green onions, salt, and pepper.
  7. Serve warm or at room temp with aioli.
