Ricotta
Ingredients
- 1 gallon whole milk
- 6 tbsp lemon juice
- 1/2 tsp salt
- Combine milk, salt, and lemon juice in a large pot and gradually heat until it’s about to boil. It should look slightly curdled.
- Turn off heat and let mixture set for 20 minutes.
- Line a colander with cheese cloth and place into a large bowl.
- Slowly ladle mixture into colander and allow to drain for about 20 minutes.
- Serve immediately or refrigerate in a sealed container.
Serves well with breads, pasta, or all by itself.
