Ricotta

Ingredients
  • 1 gallon whole milk
  • 6 tbsp lemon juice
  • 1/2 tsp salt
  1. Combine milk, salt, and lemon juice in a large pot and gradually heat until it’s about to boil. It should look slightly curdled.
  2. Turn off heat and let mixture set for 20 minutes.
  3. Line a colander with cheese cloth and place into a large bowl.
  4. Slowly ladle mixture into colander and allow to drain for about 20 minutes.
  5. Serve immediately or refrigerate in a sealed container.

Serves well with breads, pasta, or all by itself.
