Tabbouleh Salad
Ingredients
FOR THE PART
- 1/2 cup bulgur wheat
- 1 cup hot water
- 1/2 bunch chopped fresh parsley
- 1/4 cup chopped fresh peppermint
- 1 cup diced tomato
- 1/4 cup diced scallions
- 1/4 cup chopped red onion
- 3 tablespoons peeled, chopped cucumber
- 2 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Place bulgur wheat in a small bowl, add hot water, cover and let soak for 20 minutes.
- Combine with remaining ingredients and mix well.
